No guesswork is needed to decode why human health has deteriorated over the last 100 years - just examine the nutritional value in the FOOD we eat.
So, what happened to our food and how do we fix it? When researching this question, we discovered that in 1783, an Austrian Professor by the name of von Liebig was conducting what is believed to be the first research into plant health. He called what his research revealed ‘The Law of The Minimum’. What he meant was that whatever is present to the minimum in a plant will cause the most damage to the plant. A bit like without water and sun, a plant will die. For him at the time, nitrogen was what was lacking in plant health. If he was still alive, we’re pretty sure that he would be horrified to know that his research is the foundation behind most of today's fertilizers in the form of NPK (nitrogen, phosphorus, potassium).
Since the Law of the Minimum can be applied to all living things including humans, it's a natural law. To illustrate, remember scurvy? Today, we know that scurvy is caused by a lack of Vitamin C, but back in 1600 to 1700s, scurvy was killing off sailors around the world. The “cure” of course was eating citrus fruits like limes. The scurvy story exemplifies the ‘Law of The Minimum’ in human health as it shows how one ingredient can totally affect the health outcome. Note: Vitamin C was not discovered until the 1900’s.
A word fact: The slang term ‘limeys’ was adopted referring to English sailors because of the scurvy story.

When the Law of the Minimum is applied to today’s human health, what is missing is nutritious food. When applied to the human food chain what is missing is nearly everything. And, as far as our farmland and plants are concerned, imagine that they used to be fed from the periodic table with 90 plus naturally occurring minerals present many years ago – pre the industrial revolution. Today, our food is fed synthetically produced NPK followed by a dessert of pesticides, fungicides, and herbicides. This is the food we eat! For those who remember, these are the same chemicals that blew up the World Trade Center and leveled half the Port of Lebanon a few years ago.
